Few things are more disappointing than reaching for white bread and finding it dry, stale or spotted with mould. For Kiwi seniors who live alone or shop for one or two, a whole loaf can spoil before it is finished. A few simple habits can keep your bread fresh for longer and save you money.

Store It at Room Temperature

For everyday use, a cool, dry spot such as a kitchen cupboard or bread bin is best. Keep the loaf away from the stove, toaster and sunny windowsills, because warmth encourages mould, especially during a humid New Zealand summer. Leave the bread in its original bag and close it tightly with a clip or a folded end. Limiting air helps stop bread going stale.

Skip the Fridge

It may seem sensible to pop bread in the fridge, but cold air makes bread dry out and turn stale faster. The fridge is only worth considering in very hot, humid weather when mould is a real problem. If you do use it, seal the loaf well in a bag or container.

Freeze for Freshness

Freezing is the best way to make a loaf last. When you bring bread home, divide it into small portions that suit your household and place them in a freezer bag. Press out as much air as you can before sealing. Slices can go straight into the toaster from frozen or thaw on the bench for about fifteen minutes. Most bread keeps well in the freezer for up to three months.

Keep Everything Clean and Dry

Handle bread with clean, dry hands and use a clean knife when cutting. Moisture and crumbs invite mould, so wipe out your bread bin weekly with a damp cloth and let it dry completely before adding a new loaf. Avoid storing bread in a bag with trapped condensation.

Revive and Use Up Older Bread

If your bread is slightly stale but has no mould, you can still make good use of it. Lightly toasting often brings back its texture, and older slices work well for French toast, bread and butter pudding or homemade breadcrumbs. Throw out any bread that shows mould, as it can spread unseen through the loaf.

Enjoy Every Slice

With a little planning, you can enjoy soft white bread right down to the last slice. Choose smaller loaves if you eat little, freeze early and store sensibly. Your sandwiches, toast and household budget will thank you.
